GE Monogram ZFSB23DXCSS Refrigerator Evaporator Icing Up

Noticed refrigerator temp rising. Saw that refrigerator evaporator was completely iced up. Removed shelves and melted ice with hair dryer through lower vents that can see bottom two coils of evaporator. This happened maybe 2 weeks ago. Wife and I accidentally overloaded refrigerator and frig evaporator iced up again today. Read many articles and found NOT to overload frig so cleared it out to 75%, not blocking vents and melted ice again that i could see then restarted frig. Question, what keeps frig evaporator from icing up? Will evaporator clear from normal running if not overloaded?
